I used to hunt for those mushrooms as a kid. I'd go out late in the morning in the fields closest to our house, pick the whitest of them, come back home quickly and my Mom would cook then for lunch. Enjoying those mushrooms was literally all about timing. That's how quickly they spoil.
So... maybe not the best icon 🙂

It reminds of huitlacoche. I am curious if it equally delicious. I have only foraged them once and ate them fresh, but next time I want to try out this recipe.
