I remember when I was young and most all food was bland and something listed as mild had nothing but salt. Something spicy was milder than something marked mild nowadays. Culinary wise it was a hell hole.

IIRC reading about, in the post-war States it was pretty common for Italian, Chinese and Mexican food to be considered 'wildly exotic cuisine.' Indeed, based on a couple road trips I took post 2000, much of the country still hasn't moved on too much from that small-village thinking.
