Yeah no, thats not how this works. Bluesky is very much going to continue doing whatever governments are telling it to do. And if that includes political censorship then thats what they do. They already have age verification and block all NSFW content from being viewed without an account. The spiral has already started.

Thats the only one i can personally recommend. Sadly there is no list of mastodon servers i can find that includes uptime and longevity, because thats what i would usually filter by.
