I used to love this one, a very mild fruity curry. Fine for kids.
Don’t worry about getting hold of apricot nectar or couscous as substitutions are very easily made. I used to use orange juice instead and serve it over rice. I think I’ve seen generic brand tinned mango.
Chicken thighs could also be used instead of breast (if you’re willing to skin and cut them into strips or pieces) to make this dish cheaper.
Edit: If meat is still too expensive you could also just add browned cubes of pressed tofu or a handful of cashew or peanuts, or pad it out with broccoli
