I made a pork belly. Tried brining it first with the theory that the crackling would be ok because it's all fat and won't absorb much water, but I ended up having to crackle it at the end in a hot pan. The meat was amazing, but I don't reckon I'll try brining a pork belly again.

Brining is great! it let's all the flavor get absorbed into the meat, helps keep it juicy & tender.
Made a batch of spagbol yesterday & some wings for today.
Fun fact: it wasn't until I moved here thst I found spagbol was slang that the English used.
2nd fun fact: my Welsh friend makes 'welsh lasagne/spagbol, etc' by adding curry powder. Everything else he cooks is well done, this is his only transgressions into cooking blasphemy that would normally account for a beating by an Italian Nona's wooden spoon

Haha me too! I make "Dad spaghetti" which has chopped bacon and chilli in it - just a slight amount of heat, nothing ridiculous - and it's a one pot deal, so I make the sauce, then pour in the pasta and simmer till pasta is cooked. It started as a camping food in the camp oven but was so popular it made it to the home rotation!
